This is my MiL's recipe. It is super yummy and supper easy. It is a little time consuming to fry the tortillas, but totally worth it.
1.5 lbs. ground beef
dried onions
comino
salt/pepper
garlic or garlic powder
1 small can of tomato sauce
Alright, when the meat is almost browned, add the dried onions and garlic. Cook the meat all the way and drain the fat. If you use garlic powder, don't add it until after the fat is drained.
Season the meat with salt and pepper to your taste. Keep in mind that most tomato sauces also have salt. Stir in the whole can of tomato sauce. Add comino and garlic powder (if you didn't use real garlic earlier) to suit your tastes. Make sure to taste the meat to make sure you can taste the comino and garlic at the same intensity. If it tastes spiced, but bland, add salt.
Keep the meat warm on the stove, stirring to make sure it doesn't burn.
Get a skillet and fill it with about a cup of vegetable oil. Once the oil is hot, take corn tortillas and place them into the oil. Give it maybe two seconds and then turn the tortilla. Two more seconds and then take the tortilla out of the oil and place on paper towels. Do that as many times as you need to. I usually fry three tortillas per adult. *** If you skip frying the tortillas, you won't be able to fold/roll them.
Now all you have to do is get the excess oil off the tortillas, put them on a plate, add meat, cheese, etc.
Serve with rice and beans. I make it easy on myself and get the Spanish rice in a bag and refried beans from a can.
It's that easy!
